Pizza Stuffed Sweet Potatoes

We’re headed to West Palm Beach, Florida this weekend to compete in the CrossFit Games Southeast Regionals with our team. We’ve been trying to practice the workouts together and what not, which has us coming home later than usual, which has dinner  hitting the table later than usual too. Since I work from home, sometimes I’m able to whip something up in the afternoon and then just reheat it for dinner–it’s like some twisted version of leftovers. With this, I had some previously roasted sweet potatoes in the fridge, so I just popped those out, assembled the pizza deliciousness, reheated everybody and we were able to gorge at a reasonable hour.

Ingredients

  • 4 medium sweet potatoes
  • 8 oz mushrooms, sliced
  • black olives, sliced
  • 1 lb sausage
  • 1 onion, thinly sliced
  • Parmesan cheese, finely grated (optional)
  • any pizza toppings you like will work

For the Sauce

  • 2 c tomato sauce
  • 2 T olive oil
  • 1 T onion powder
  • 1 T dried oregano
  • 2 t garlic powder
  • s&p

Method

Get your oven to 400ºF.

Prick and place your sweet potatoes on a baking sheet. Let them roast until their insides are soft and mushy, about 45 minutes. I would not recommend microwaving these, as I think the oven develops a sweeter flavor than the microwave, just my 2 cents.

While the potatoes are roasting, whisk together the sauce ingredients. Taste and adjust to your preferences, then set aside.

While the potatoes are still roasting…

In a large saute pan, crumble and brown the sausage. Remove the meat from the pan, reserving the rendered fat. Toss in the mushrooms and onions. Let them cook until the mushrooms have browned and the onions are soft.

Once the potatoes are done, slice them in half (lengthwise) and arrange the halves nicely on the baking sheet. Smash and loosen the sweets’ insides with a fork.

Ladle a few spoonfuls of sauce on top of the sweet potato, followed by the mushroom/onion saute, sausage and olives. If you’re using Parmesan, add a little finely grated cheese to help glue everything together.

Toss the baking sheet back in the oven for a couple minutes, to re-warm everything.

    Good luck to your team Megan! This Sweet Potato Pizza looks awesome. Looks like I’ll be making these with our box of sweet potatoes from Costco! I wish the Regional WODs were released just hours/minutes before the competition. There’s something about the ‘unknowable’ which CrossFit used to tout a long time ago, you know? Anyhow, I hope you all kick a$$!

      Thanks Liz! Long time no comment.

      I think you will see surprise WODs at the Games finals…but since all regionals aren’t the same weekend there’s really no way to do that at this level without changing the programming for each one.

      It would be fun though. I did love the “holding room” from 2010 when no athletes knew what the workout was until the walked into the arena (and it ends up being 3 workouts back to back to back!)

    This is a great idea! I make these with portabello mushrooms too! Delish :) Pizza was definitely my weakness pre Paleo, so I love all the pizza options y’all give! Great job!

    I made these tonight, and I also used another recipe off this site for the sauce instead of the included one (http://www.health-bent.com/sauces/paleo-roasted-marinara). I must say I have to give these a big fat “F”

    For fantastic!!!!!!!

    I was skeptical because I generally dont like sweet potatoes, but these came out really awesome. And the garlicky marinara I had made previously went great with them!!!

    Hopped to it in the kitchen this morning and whipped up these ummm ummm good sweet pot pizzas. I had two types of Whole Paycheck saussies in the fridge so I put one kind on 2 of ‘em and the other kind on the other 2 of ‘em… some have olives (green, that’s all I had) and some don’t…. all of it — delicious!

    Ok, so I was a little skeptical about sweet potatoes and tomato sauce, but these turned out fabulous! I’m not a huge olive fan, so I omitted those, but it was a huge hit with my family. I will definitely be making this again!

    O.k. I was a little skeptical at first, but this is my new favorite recipe! I omit the olives for my daughter & I, but my husband and son love them. YES! the kids eat this too! I used organic Italian sausage.

    Another winner! I treated myself to a little cheese on top of this and made the toppings my favorites, and it was fantastic. Since I was making a quick lunch, I also subbed Muir Glen pizza sauce. A note: I think most sweet potatoes take far longer to bake – at least an hour. I baked them with other things I was cooking earlier in the week and they were ready for quick re-heat. Thanks for a creative and healthy idea!

    Whoa. Anyone wondering if these are good, THEY ARE. Just made some without mushrooms, and I added the sauce and beef together to heat up. Very very tasty from someone who is not a big fan of sweet potatoes.

    Ok…you have just transformed my life! I am so grateful to have found this site! I have SEVERAL issues and began eating “Paleo” without even realizing it, which ultimately resulted in me feeling 100% better. Anywhoo…the sweet potato (or yam) is now my new best friend. I tried the sweet potato “bun”, LOVE it. This will be next!
