Paleo Breakfast Casserole

Breakfast for dinner. Or breakfast…for breakfast. Tastes the same going down, anytime of day…

Ingredients

  • 1 lb fresh chorizo or breakfast sausage
  • 8 eggs
  • 3 small yukon gold potatoes or 1 medium sweet potato, cubed
  • 1 small can diced green chilies
  • 4 oz shredded raw cheese, optional

Method

Preheat your oven to 350ºF. Using a sharp knife, slit the backs of your sausages and remove the casing from the meat.  Put the meat in a skillet, over medium-high heat and break the sausage into crumble size. Cook until browned. Remove the sausage from the pan and reserve. Add the potatoes to the sausage grease (which you have meticulously left in the skillet and not with the reserved sausage). Let them cook until tender, stirring occasionally, about 15 minutes.

In a large bowl, beat together the eggs, sausage, potatoes, green chilies and cheese. Pour into an oven-safe glass or ceramic dish. I used a 9×9 Pyrex. Bake until the eggs are set, about 20 minutes.

  2. I made this for dinner last night. Used sweet potato and omitted cheese. Delicious! At first it seemed like a lot of sausage to me but the ratio was right on. I had to set mine under the broiler for just a few minutes to firm up the last little bit of egg on the top in the very middle (I was afraid it might dry out if left it in the oven at 350 for much longer.) Keep up the good work.

  4. Very tasty, we loved this on Christmas morning! I also added sea salt, freshly ground black pepper, and garlic powder. Plus I practically had to double the baking time so the eggs would set up. Thanks for sharing!

    1. yeah, every oven is different, and if the pan is smaller or the edges are deeper, the cooking time will definitely be higher. glad y’all enjoyed though!

  6. Is this Paleo? I thought you couldn’t have dairy or potatoes on Paleo?

  7. Is there something we can sub for the potato? My husband just found out that his body doesn’t process carbs right and he can’t have any carbs at all. I would love to offer him this recipe without the cheese and subbing the potatoes if possible.

    1. turnips would probably work well, but i can’t attest to the cooking time needed to get them cooked through.

  8. I enjoyed this for breakfast today. I think it needed more spices and flavor, although I did already use Italian seasoning. Maybe salt & paprika? I did cook it for 18 min then broiled for 5 min and it turned out perfect. I used Italian chicken sausage instead of chorizo, which I will try next time too! Yummy with the sweet potatoes!

  9. Real Chorizo has seasoning and salt enough to flavor the dish by itself. Using another type of sausage will probably require additional seasoning.
