		<description>I made this tonight (to go with the buffalo chicken Caesar salad), and it turned out very well. I don&#039;t have a small bowl for my food processor, just the normal bigish bowl, so I had to keep pulsing with one hand while the other dripped in the bacon fat. My husband came home and dipped a piece of the chicken in the mayo and proclaimed me &quot;the best wife&quot; so there :P</description>

		<description>lacto-fermentation applies only when there is lactose (milk sugar) available for bacteria for grow/feed on. since we&#039;re only using eggs and oil, that wouldn&#039;t be the case. so, like brandon said, it&#039;s ready to eat as soon as it&#039;s the consistency you&#039;d like it to be. i&#039;d say no homemade mayo should go longer than a week in the fridge.</description>

		<description>we like to use it right away. it should be the consitency of jar mayonnaise when made but will harden some in the fridge due to the nature of the fat. i&#039;m not sure how long it would last. basically as long as you felt safe since it has raw egg in it. maybe a googling is in order.</description>
