Paleo Fish Sticks (No Nuts Involved)

Perfectly crispy and easy to make, these fish sticks may fool even the most seasoned fish stick connoisseur.

Ingredients

  • 1 ½ lbs haddock (or any firm, meaty white fish)
  • roughly 6 oz of plantain chips (Check labels, ideally just plantains, palm oil and salt)
  • F.O.C. (fat of choice), palm and coconut will work well here

Method

In a food processor, crush up the plantain chips until they’re the consistency of fine bread crumbs. Place the crumbs in a zip-top bag and add some salt, if the chips haven’t already been a-salted, I mean, salted. Corny? Yes.

Slice the fish fillets into strips/planks/sticks, widthwise. Working in batches, add a few fish strips to the zip-top bag and shake around until the strips are completely coated.

Melt your F.O.C. in a saute pan over medium heat. Place the coated strips in the pan and let them get brown before you flip them to the other side. This should take less than a minute for each side. If you’ve cut the fish sticks pretty thick, don’t forget you’ve got 4 sides to brown, not just 2.

      thanks lisa. i haven’t tried it any other variation yet. i thought about chicken of course, but wasn’t sure if it’d have adequate time to cook through before the plantain crumbs browned. so…we’ll just continue to play around with it and see what happens.

    My husband made these for us last night. I’m Paleo but my husband and adult son aren’t. We all loved this recipe. We’ve tried many Paleo recipes which we’ve absolutely hated and would never make again. But this one is a keeper. We used Haddock but my husand said he’d try a firmer fish next time. However, the Haddock works!!

  9. These look great! What are some other types of fish you could use? Also, where did you find the plantain chips?

    1. i usually can find plantain chips around the ethnic section of the produce section or at tjmaxx or world market (if you have one of those). i feel like any white fish that holds up well when it’s cooked will work well here. so maybe instead of the ones that would work, the ones that wouldn’t; think tilapia and catfish types.

    Is there a reason you specify plantain chips instead of banana chips? I can only find the latter at my local grocery, and would like to know if it’s really necessary before running around looking for them.

    1. Usually banana chips have sugar and banana flavor added. If you can find plain banana chips they work well too

    I really struggled with these. I had the chips in the food process FOREVER and they woulnd’t grind down enough. Then, since they were not finely enough ground, they wouldn’t stick to the fish. What did I do wrong?

    1. hmmmm. perhaps the plantain chips were too thick and the food processor had a hard time getting them into crumbs?
