First of all, I love these things! I always bake them when I need that extra bit of sweetness in my day (which is a lot lol). A tasty variation for the holidays is to use a full cup of pumpkin puree instead of the bananas with 1.5 tsp of pumpkin pie spice keeping all the other ingredients the same. The pumpkin flavor tastes pretty awesome with the dark chocolate. I have also used unsweetened applesauce instead of bananas in a pinch when I'm out and they still come out good, although I love the banana flavor.

hi carrie. the texture of homemade ground almonds won't be as fine in texture as almond flour. but technically, ground almonds and almond flour are the same thing...but not. i hope that helped. hahaha.

I saw this recipe just last night and had tomake them right away. I am so glad that I did. I did substitute the brown sugar for sucanat with success. I am more of a "harder" cookie person than soft, but these were mighty tasty right out of the oven. I put the ones that "survived" into the freezer and ate one a few minutes ago. YUMMO! The boys are clamoring for more and I am doing everything to keep my own hands out of the freezer. While they are cold to the touch, eating them frozen gives them that more cookie-like texture. These are without doubt a keeper in my book. Now I cannot wait to try other items from your site.

I'm so glad my mom buys two bunches of bananas, one for use during the week that is almost to the point of being cooking only and one that is still slightly green. ^^

That way, we have bananas we can cook with and by the time we get through one bunch, the other is ready to be both eaten and cooked with.
