15 Minute Apple Crisp (Nut Free)

Yield: 1 serving. Just kidding (but not really)

Ingredients

  • butter, for the skillet
  • squirt of lemon juice, about 1 teaspoon
  • 2 lbs apples, peeled, cored, & chopped
  • 1/3 cup apple juice concentrate (in the freezer aisle)
  • 1/4 cup raisins
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon grated nutmeg

For the Topping

  • 3 tablespoons tapioca flour
  • 1 tablespoon coconut flour
  • 2 ounces (1/2 stick) cold butter, cut into small cubes
  • 1 tablespoon apple juice concentrate

Method

Place your oven rack in the middle of the oven and turn on broil.

In a medium oven-safe skillet (cast iron recommended), melt a few tablespoons of butter of medium-high heat. Add in the lemon juice, apples, apple concentrate, raisins, vanilla, cinnamon, ginger, and nutmeg. Stir to combine and let cook until the a.j. concentrate has reduced and things get bubbly, about 5-6 minutes, then turn off the heat.

Meanwhile…

In a small bowl, combine the tapioca and coconut flours. Toss in the butter and use your hands to create small pea-sized crumbs. Gently stir in apple juice concentrate.

Sprinkle the mixture evenly on top of the apples and place in the oven. Broil until the top has lightly browned, about 4-6 minutes.

    Waah….no frozen apple juice concentrate in France!! Could I possibly use apple sauce instead or do you think I should reduce regular apple juice on the stove?….This looks wonderful and I love your topping/crisp concoction…this must be made! Thank you for sharing the sort of speedy fare required in our house for a quickly expedited dessert!

    Delicious! Thanks for the recipe! Since the topping didn’t make as much as I hoped, I doubled it. To the above commenters, I put a dollop of coconut ice cream (the one closest to paleo as you can find in the store, or if you have some time, homemade is ideal), it satisfied the sort of “a la mode” I craved. :)

    This looks awesome! I have some sweet cherries from Costco…wondering if you think I could sub them for the apples and make it a cherry crisp? Would you still do the apple juice concentrate?

    This was so good! I doubled the topping and added a bit of orange zest to the apples. I also didn’t have apple juice concentrate so I used pineapple instead which was on hand. Very good, especially with some coconut milk over it. The crust/topping was so good and chewy.I love tapioca flour. It was like bread pudding which I have been craving. Will put this in the desert rotation!

    The topping ended up tasting a little powdery/saw-dusty. I feel like every time I use coconut flour this happens (I’m wondering if it’s the brand of coconut flour?). The apples part is delicious though!
