Peach Rosemary Iced Tea & Blueberry Iced Tea

One of the biggest questions we get from people in our gym when we tell them no more diet coke or sweet tea (that’s a big deal in the south) is, ‘Water is boring. What can I drink now?” So we go down the standard list: unsweetened seltzer water (there are a ton of flavor options from: LaCroix and Polar), iced coffee (no sugar, cream is optional) and unsweetened iced tea. We’re big fans of unsweetened iced tea, but when someone is used to a 50% sugar concentration, it’s kind of like getting used to drinking your coffee black. So we’ve pepped up the standard unsweetened brew with some summer fruit and fresh herbs in hopes that this will help ween some of our southerners off their sweet tea infatuation.

What you need to start:

  • 1 gallon black tea

Bring 1 gallon water to a very gentle simmer. Place 16 standard tea bags in the water. Turn the heat off the water and let the tea bags steep for 5-10 minutes.

Rosemary-Peach

  • 2 lbs (about 6 large) peeled & sliced peaches
  • 1/4 c coconut sugar
  • 2 stalks of fresh rosemary
  • 1/2 gallon black tea

Place peaches and sugar in a sauce pot and cook on medium heat until the peaches are bubbly and broken down. Puree the mixture in a food processor or blender, then strain through a fine mesh strainer, directly into the black tea. Add the rosemary stalks and let steep at least 2 hours in the fridge.

Blueberry Black Tea

  • 3 c blueberries
  • 1/4 c coconut sugar
  • 1/2 gallon black tea

Place blueberries and sugar in a sauce pot and cook on medium heat until the blueberries are bubbly and broken down. Puree the mixture in a food processor or blender, then strain through a fine mesh strainer, directly into the black tea. Refrigerate until cold.

  1. Yum! Those sound so refreshing on such a warm day like today! I’m going to make them with green tea since I’m working on regulating my hormone levels. Thank you for thinking of everyone dealing with the heat today!!!

  2. I love fruit-flavored iced teas–they are a refreshing change from plain tea or water. For quick and easy flavored tea, just substitute natural fruit tea bags for some of the black tea bags when you steep the tea–you get great fruit flavor fast with no sugar (and minimal mess). Just don’t steep the tea for more than 10-15 minutes–it gets bitter. If you want stronger flavor, use more bags.

  3. Great ideas! I am also on the iced tea train–I drink gallons of unsweetened iced green and mint teas all summer–but fruit definitely sounds like a good way to go for people used to more sugar. I might even make these fruit combinations and use them to flavor sparkling water for a nice change. :)

  4. I switched to a Paleo diet 6 weeks ago, and have been brewing caffeine free iced teas–my favorites are peppermint and Wild Berry Zinger. They have enough flavor they don’t really need an added sweetener, and they have some color so it seems better than water. Hopefully I won’t find out that these aren’t Paleo approved. ; )

  5. Sounds pretty damn tasty, gonna have to brew some up. One question though, what’s with the coconut sugar? Seems like an unnecessary, and probably more expensive, substitution for standard table sugar considering they are essentially the same thing metabolically. Does it taste different?

    • short answer is no, we’d say to just use table sugar but then we’d get more hate mail and “let me tell you about how you’re not paleo” comments.

      supposedly it is lower glycemic if you’re into that sort of thing…and you can get it for $5 a pound some places so cost is decent…

      we’d say that if you feel better about a slightly more “natural” sugar then coconut is a good option…but…we also feel that just using table sugar is fine if you reconcile that it really is the same like you have. that’s what we do.
